Quick Strawberry Cobbler that’s Easy and Delicious

Berry season is here, and this quick strawberry cobbler is our favorite (easy) way to transform those delicious morsels into an even tastier dessert. The sweet berries, combined with a biscuit topping to soak up all that goodness, make the perfect combination.

When it comes to meals and dessert, simple is what you will find on our homestead. I’m a firm believer that cooking from scratch does not have to be hard or excessively time consuming. When fresh, real food ingredients form the foundation of what you are eating, simple can taste really good.

Hence, pies are a rarity in our house, but we love a good crisp, crumble, or cobbler! They are just as delicious and way quicker to whip together.

And because you can make this cobbler with fresh or frozen berries, it is a treat that can be enjoyed all year round!

Ingredients in Quick Strawberry Cobbler

Strawberries – Strawberries on their own are delicious and how this recipe is written. But you can also follow the same recipe using a different berry, mixed berries, or add some rhubarb for strawberry rhubarb cobbler. Fresh or frozen berries also work!

Sugar – We like to use either organic white cane sugar or sucanat (natural cane sugar) in this quick cobbler.

Flour – All-purpose or gluten-free flour works best. For fresh ground flour, we use the same amount of flour written in the recipe with freshly ground soft white wheat berries.

Cinnamon – Cinnamon adds flavor, but could also be omitted.

Sea Salt

Butter – When it comes to the biscuit like cobbler topping, butter is our favorite. For dairy free, coconut oil would work as a substitute.

Baking Powder (aluminum free) – We like to buy ours in bulk from Azure Standard, or Bob’s Red Mill aluminum free baking powder is a great option too.

Whole milk or Cream – We’ve used both, and they are both delicious!

How to Make this Quick Strawberry Cobbler

Preheat oven to 350°F (176° C) and gather equipment and ingredients. I love to make this cobbler in a 10” cast iron pan but a 9×9” glass baking pan would also work well!

Begin by mixing the filling. Toss stemmed and sliced strawberries with the other filling ingredients (sugar, flour, cinnamon, and salt) directly in the pan you will be baking in.

Next, make the cobbler topping.

Begin by stirring together the dry ingredients (flour, sugar, baking powder, and salt).

Add in the melted butter and milk or cream. Stir until a sticky, wet dough comes together.

Using a tablespoon, drop spoonfuls of dough over the strawberry mixture. It’s ok if it’s not completely covered.

Bake at 350°F (176° C) for 35 minutes, uncovered, until the strawberries are bubbly and topping is fully cooked.

Wait 10-15 minutes before serving, and we highly recommend serving with a scoop of vanilla ice cream.

Can you use fresh or frozen berries?

Yes! Both fresh or frozen berries work great in this cobbler recipe. I will usually add an extra tablespoon or two of flour if I’m using frozen berries to soak in the extra liquid with the frozen berries.

Can I use other berries besides strawberries?

Absolutely! This quick cobbler can be made with other berries or a combination of mixed berries. We also like adding rhubarb with strawberries for a strawberry rhubarb cobbler.

Quick Strawberry Cobbler Recipe

Yield: 6-8 servings

Ingredients:

Strawberry Filling:

– 2 quarts strawberries, halved and stemmed
– ½ cup sugar
– 1/3 cup flour
– 1 tsp cinnamon
– ¼ tsp salt

Cobbler Topping:

– ¼ cup butter, melted
– 1 cup flour
– ½ cup sugar
– 2 tsp baking powder
– ½ tsp sea salt
– ½ cup whole milk or cream

Directions:

1. Preheat oven to 350°F (176° C).

2. In a 10” cast iron pan or 9 x 9” baking pan, toss strawberries with the rest of filling ingredients (1/2 cup sugar, 1/3 cup flour, 1 tsp cinnamon, ¼ tsp salt).

3. Next, mix up the topping in a mixing bowl. Stir together the dry ingredients (1 cup flour, ½ sugar, 2 tsp baking powder, ½ tsp salt).

4. Add in melted butter (1/4 cup) and milk (1/2 cup) and stir until a sticky, wet dough forms.

5. Drop spoonfuls of dough over strawberries.

6. Bake uncovered for 35 minutes until bubbly.

Wait 10-15 minutes before serving (ideally with a scoop of vanilla ice cream).
