We grow the majority of the food that our family eats here on our homestead, so trips to the grocery store only happen once every few months. But, every now and then, I’ll swing by the local Aldi and grab avocados and bananas just because.

When we have them on hand, there are always requests for fudgsicles or these avocado cookies. Because of the neutral flavor, healthy fat, and creaminess, avocados work really well in desserts and pair perfectly with chocolate.

Ingredients in Fudgy Avocado Cookies

Ripe Avocados

Sucanat – Sucanat stands for sugar cane natural and is made from 100% sugar cane. It’s a more natural form of sugar and still contains the natural molasses giving it a brown color and added vitamins and minerals. We buy it in bulk from Azure Standard. Brown sugar could be substituted in this recipe.

Eggs – Flax eggs could be swapped out if needed.

Cocoa or Cacao Powder (unsweetened) – The difference here is that cacao powder is the less processed form that tends to be more bitter tasting but also retains more nutrients. Cocoa powder is typically roasted making it mellower and sweeter. Whatever you choose, make sure it’s unsweetened. We like to purchase either from Azure Standard.

Flour – If you are using fresh ground flour, we like to grind soft white wheat berries for baked goods. Otherwise, all-purpose flour is great.

Baking Soda

Sea Salt – We use Redmond’s Real Salt that we buy in bulk. There’s something about sea salt and chocolate that pair perfectly together.

Chocolate Chips – Semi-sweet or dark would both be delicious in these avocado cookies. White chocolate chips would make a fun substitute as well.

How to Make Fudgy Avocado Cookies

Begin by preparing your baking sheet, lining it with a sheet of parchment paper or a silicone baking mat. Preheat oven to 350°F (177° C).

In a medium sized mixing bowl, mash avocados. Then add in sugar and eggs and mix well.

Once combined, add your dry ingredients (cocoa powder, flour, baking soda, and sea salt).

Stir together until everything is combined and no green is visible.

Mix in chocolate chips, reserving some for sprinkling on top.

Using a spoon or cookie scoop, scoop out 1 tbsp portions of dough onto the pan. Gently flatten a slight amount, and you can add a few extra chocolate chips on top if desired. 

Bake for 8-10 minutes.

Cool before serving to avoid cookies falling apart.

How do you store avocado cookies?

They can be stored on the counter for 1-2 days or in the refrigerator for 3-5. Our family really enjoys them cold and tends to store them in the fridge.

For long term storage, you can freeze these on a cookie sheet and then store in a freezer friendly bag.

What if my cookies are falling apart?

These are definitely a softer cookie, but they should stay together with a few tricks. Cooling completely before serving is a big one. Keeping them in the refrigerator also helps to keep them from breaking apart.

Ingredients:

Wet Ingredients:

– 2 ripe avocados
– 1 cup sucanat or brown sugar
– 2 eggs

Dry Ingredients:

– 1 cup cocoa powder (unsweetened)
– 2/3 cup flour
– 1 tsp baking soda
– ½ tsp sea salt
– ½ cup chocolate chips (+ extra for sprinkling if desired)

Directions:

1. Preheat oven to 350°F (177° C) and prepare baking sheet by lining it with parchment paper or a silicone baking mat.

2. In a medium sized mixing bowl, mash avocado until smooth.

3. Add in sugar and eggs and mix until combined.

4. Next, add in the dry ingredients (cocoa powder, flour, baking soda, and sea salt). Mix thoroughly until no green from the avocado or flour is visible.

5. Stir in chocolate chips.
