A Delicious, Homemade Biscuit, FAST!

I first started making these biscuits when I wanted something to go with our creamy chicken pot pie soup. But, as is often the case, I was scrambling for time and wanted to get something on the table as soon as possible.

This recipe is adapted from this easy 4 ingredient pizza crust recipe that has the same ingredients in slightly different proportions and they are both staples in our house!

They are slightly denser than a standard, tall and flaky biscuit, but they have the perfect chewiness and are delicious! Plus, the addition of yogurt gives them more protein than the standard biscuit. And you can make them in a fraction of the time.

Yogurt Biscuit Ingredients and Substitutions

All you need is 4 basic ingredients and you have all you need to whip up these easy drop biscuits!

Flour – We typically use white wheat berries from Azure Standard that we grind in our Nutrimill. But a standard all purpose flour would work or you could even use Einkorn flour or an all purpose gluten free flour in this recipe.

Baking Powder – Always look for aluminum free baking powder. We like to use either Bob’s Red Mill baking powder or the aluminum free baking powder from Azure Standard.

Sea Salt – Redmond Real Salt is our favorite and we buy it in bulk for the best price but any sea salt will work.

Plain Yogurt – Greek yogurt works great in this recipe but regular plain yogurt will work too. A thicker yogurt, like Greek style, won’t need quite as much flour as a less thick standard yogurt. We always use our homemade yogurt in these yogurt biscuits.

How to Make Yogurt Biscuits

Once you have your 4 ingredients, a couple spare minutes to mix it together and under 20 minutes of bake time is all you need.

My favorite way to make these is on a cast iron pan. I find that they bake the most evenly this way. And seasoned and heated cast iron is completely non-stick. But, any baking sheet would be fine.

Before mixing the ingredients, I get the oven preheating to 350°F and place my very lightly greased cast iron pan in the oven to get that preheating as well.

Gather your ingredients and mix together the flour, baking powder, and salt.

Then add your yogurt and carefully mix that into the flour mixture.

adding yogurt

You don’t want to overmix the dough but want to make sure that everything is thoroughly incorporated.

Depending on consistency of the dough, you may need to add either more flour or more yogurt. When I use our plain homemade yogurt that can be a little more on the runny side, I find that I need to add a few extra tablespoons of yogurt to get a stiff, workable dough. You are looking for a consistency that you can work into a biscuit shape and not like a flat bread.

mixing biscuit batter

If you are using a thicker Greek yogurt, you may find that you need to add a little more yogurt if it seems too dry.

Once the dough is ready, scoop biscuit size mounds of dough onto the pan. The dough doesn’t rise much in the oven so I like to mound it up in a biscuit shape.

After all of your biscuits are formed, bake at 350°F for 18 minutes.

Can you freeze yogurt biscuits?

Absolutely! These are great for making ahead and pulling out as needed. This is an easy recipe for scaling so it’s a great one to make a big batch of and freeze the extras.

How do I serve these biscuits?

The options are endless! We most commonly make them with our creamy chicken and potato soup (think chicken pot pie) but they would be great alongside any soup or stew, for a breakfast biscuit, or with sausage gravy.

Directions:

1. Preheat oven to 350°F. If cooking the biscuits on a cast iron pan, place that in the oven, slightly greased, to preheat.
2. Mix together flour, baking powder, and salt.
3. Add in yogurt. Without overmixing, stir in until thick dough is formed (see note below).
4. Spoon biscuit dough, in small round mounds onto preheated cast iron pan or baking sheet.
5. Bake at 350°F for 17-19 minutes.

Notes:

*How much flour you add will depend on the type of yogurt you use. It’s roughly a 1:1 ratio but with thicker Greek style yogurt, you won’t need quite as much flour as with a less thick regular yogurt. Add extra flour or yogurt as needed to get the right consistency in the batter so that it will form biscuit like mounds and not a thinner flatbread.
