Egg Bites with Yogurt (4 Ingredients + Endless Possibilities!)
Easy egg bites with yogurt are a delicious high protein breakfast or snack! You can quickly make them with a few basic ingredients, or doctor them up with added meat and veggies.

When scrambled eggs are our standard breakfast, switching things up from time to time with these egg muffins is always a hit! Plus, they are a great one to make ahead and store in the fridge or freezer and reheat for a quick breakfast when you need it.
The Secret Ingredient in Egg Bites
We’ve been making egg bites or egg muffins for years. But I always made them with just eggs, spices, and whatever mix-in’s we added in. Then I learned the secret ingredient. Adding 1 cup of full-fat, plain yogurt to egg bites. This one ingredient makes a huge difference to create a delicious, fluffy texture. Goodbye rubbery eggs.

Egg Bites with Yogurt Ingredients & Swaps
Eggs – The number of eggs you use will vary depending on the quantity of mix-in’s you are adding. More on that below!
Plain Yogurt – We use our homemade yogurt and that works great in these egg bites. But you could also swap cottage cheese, sour cream, or plain Greek yogurt.

Shredded Cheese – Shredded cheddar, gouda, Monterey jack, colby, muenster, you can’t go wrong here!
Salt & Pepper
Optional Add-Ins – Bacon, sausage, ham, mushrooms, tomatoes, onion, spinach, peppers, broccoli, etc.

How to Make Egg Bites with Yogurt
Begin by preheating your oven to 350°F and greasing your muffin tin well. This is key to avoid a stuck on egg mess that will be a nightmare to clean. We have this non-stick muffin tin from Caraway and love it, or silicone muffin cups work well as a non-stick option.
From there, gather your ingredients and put cracked eggs, yogurt, salt, & pepper into the container of your blender. We love our Vitamix, but something smaller would also work fine.
Pro Tip: Blend on low to avoid an extra frothy egg mixture.
Pour the egg mixture evenly between the 12 muffin cups.
Sprinkle shredded cheese and any other added mix ins into the egg cups.


Bake at 350°F for 20-22 minutes.
Let them cool for a few minutes before removing from pan.

The Egg Bite Blueprint for Endless Possibilities
Depending on how many mix-ins you are adding will change the number of eggs you use in this recipe. In these pictures, where we just sprinkled the top with shredded cheese, I used the full 10 eggs.

If you have around ½ cup of mix-ins to add, go down to 9 eggs.
With 1 cup of mix-ins, 8 eggs are best.

How to Make Ahead & Freeze Egg Bites with Yogurt
Freezing egg bites is a great way to plan ahead for a quick breakfast as needed.
To freeze, flash freeze individual cooked egg cups on a baking sheet lined with a silicone baking mat or parchment paper. Then store in gallon sized freezer bags.
To reheat, thaw overnight and warm in the oven for about 10 minutes. If the egg bites are still frozen, cook them at 350°F for about 20-25 minutes.
Egg bites with yogurt also store great in the refrigerator in an air tight container for 3-5 days. Simply reheat for a couple of minutes in the oven or microwave until warmed through.

Yield: 12
Ingredients:
– 8-10 eggs*
– 1 cup plain yogurt
– ½ cup shredded cheese
– Salt & pepper
– Mix-ins (optional) – bacon, ham, sausage, onion, mushroom, tomatoes, peppers, spinach etc.

Directions:
1. Preheat oven to 350°F. Grease muffin tin thoroughly or place silicone muffin cups into muffin tin.
2. In the container of a blender, place eggs, yogurt, salt & pepper. Blend on low until mixed.
3. Divide egg mixture evenly into 12 cups.

4. Sprinkle cheese and any additional mix-ins into the egg mixture.
5. Bake at 350°F for 20-22 minutes.
6. Let cool for a few minutes before removing from pan.
*The number of eggs used depends on how much mix-ins you are adding. For no added mix in’s, use all 10 eggs. With ½ cup mix-ins, use 9 eggs. And 1 cup mix-ins, use 8 eggs.
