We love eggs at our house. Living on a homestead, they are pretty much always available in abundance, delicious, and nutrient dense to boot.

But sometimes, eating eggs whether scrambled, poached, fried, or hard-boiled day after day can get a little old. When we need to switch things up, these healthy sausage patties become the perfect non-egg, protein rich breakfast addition!

Pair these healthy sausage patties with homemade yogurt, butternut squash muffins, sourdough pancakes, baked oatmeal, or gluten free apple bread and you have an amazing breakfast ahead of you!

Protein For Breakfast

Research is clear, starting the day with a nutrient dense breakfast is important to start your day off on the right foot. 

For everyone, but especially children, having a breakfast rich in protein with some healthy fats along with carbohydrates is key to keeping blood sugar stabilized. This is crucial to avoiding those mid-morning crashes that send you starving, hangry, and looking for coffee or a sugary snack by 10 am.

I have clear memories of breakfasts from my childhood comprised of bagels, nonfat yogurt, or packets of oatmeal that left me feeling shaky and in desperate need of a snack just a couple hours after eating breakfast.

Thinking back to the popular breakfast foods of our childhood—sugary cereals, pop tarts, toaster strudels, and donuts make me cringe. But, what if the simple addition of some protein could make all the difference?

I love the work of the Glucose Goddess, as she compares the body’s blood sugar response to different foods. For example, she shows how eating toast and jam will cause a significant blood sugar spike in the body. But eating the same toast with some unsweetened almond butter will cause almost no blood sugar spike at all.

All that to say, we love adding these healthy sausage patties alongside our typical breakfast for an extra burst of protein to get the day started right and set the tone for stable blood sugar throughout the day!

Make Your Own Healthy Sausage Patties

In a world of convenience, it is tempting to go out and buy whatever premade, frozen breakfast sausage option is at your local grocery store. However, most premade sausages are filled with unwanted ingredients: sugars, nitrates, and other additives to name a few.

Also, you will pay for the added convenience in the steeply increased price of these more processed, pre-packaged sausage patties.

By making your own, you are 100% in control of the ingredients you use, where you source your pork from, and will save money!

Bulk Healthy Sausage Patties for Easy Freezer Meals

Our strategy when we are whipping up these sausage patties is to make them in bulk. Usually, 3 pounds of ground pork at a time, as the recipe below indicates. This makes roughly 20 sausage patties that I can flash freeze to have on hand when the need for a quick breakfast arises.

When life is full and there are many hungry mouths to feed, I like to get the most bang for my buck in the kitchen. I almost never make a meal that will just feed us once.  Rather, I make most everything in bulk to feed us at least twice to save time, work, and dishes.

To freeze, simply cook as instructed and then lay sausage patties in a single layer on a baking sheet. Place a piece of parchment paper or silicone baking mat below to keep from sticking. Move baking sheet to the freezer until sausage patties are completely frozen and then store in ziplock bags in the freezer.

To eat, either thaw in the fridge overnight and then heat or cook from frozen. We do this by baking in a 350°F oven for 20-30 minutes.

Ingredients

The sky is the limit when it comes to flavoring your sausage. There are many delicious combinations out there depending on whether you like it sweet, spicy, or savory.

Our favorite is a maple sage breakfast sausage. The combination of the maple syrup and sage with a bit of mustard and garlic make a deliciously flavorful sausage that’s a winner with all ages. But, feel free to adjust the recipe or experiment with it according to your preferences.

What do you need?

  • Ground Pork – This is a great opportunity to support your favorite local farm if that’s an option. We love to purchase or barter for ground pork from neighboring farms that are ideally pasture raised using natural practices. Not only is this great for the animal and planet but it is also going to make those sausage patties as healthy as possible.
  • Maple Syrup
  • Dried Sage
  • Garlic cloves (or garlic powder)
  • Mustard (or mustard powder)
  • Salt

Equipment Used

Healthy sausage patties are as easy as, 1) mixing up a few common ingredients, 2)forming into patties, and 3) cooking on a heavy bottomed skillet.

All you need is:

Healthy Sausage Patties Recipe

Yield: 18-20 sausage patties

Ingredients:

3 pounds of ground pork
¼ cup maple syrup
2 tsp dried sage
3-4 garlic cloves, minced or 2 tsp garlic powder
1 tbsp mustard or 2 tsp mustard powder
1 tbsp salt

Directions:

1. Add all ingredients to a large mixing bowl.

2. Mix thoroughly until everything is incorporated. (Don’t be afraid to use your hands for this!)

3. Form into patties and flatten so they are roughly ¼ – ½” thin.

4. Heat skillet over medium-high heat.

5. Once hot, add patties in batches to skillet. Cook patties for roughly 3-5 minutes per side.

6. Either serve immediately or freeze for later use.

Freezing Instructions:

To freeze, place sausage patties on a baking sheet in a single layer. Putting a piece of parchment paper or a silicone baking mat underneath will keep sausage from sticking.

Place baking sheet in freezer.

Once frozen, store sausage patties in Ziplock bags or other freezer safe container.

To reheat, either thaw for several hours or overnight and then reheat. Or, heat from frozen in a 350-degree oven for 20-30 minutes.
