The Shredded Raw Carrot Salad I Eat Every Day for Big Benefits
This simple four-ingredient shredded raw carrot salad is not just delicious and refreshing, but it’s had a profound impact on my overall life and health as well!

There are few foods that I go out of my way to get in every day, but liver and this raw carrot salad are two of them. I shared all about my experience with liver and how it changed my life in a previous post. But what’s so magical about carrot salad?
Raw Carrot Salad Benefits
Carrot salad gained popularity after being touted by biologist Dr. Ray Peat. He specifically studied hormone physiology and his research claims that the fiber in raw carrots uniquely allows them to remove excess estrogen and other endotoxins from the body. Therefore, making it highly effective in helping to balance hormones, aiding liver function, boosting digestion, and supporting the thyroid.

My Experience
I’m not a doctor, and this is by no means medical advice or claims, but what I can share is my experience from incorporating a shredded raw carrot salad daily in my own life.
For several years, I’ve struggled with hormone imbalance issues, specifically with estrogen and low progesterone.
When I heard about carrot salad about 4 years ago, I decided to give it a try. I started eating a raw carrot salad daily and noticed benefits almost instantly. My erratic postpartum cycles regulated, hormonal acne disappeared, digestion improved, and I just felt better overall.
Fast forward to more recently, I had gotten out of the daily carrot salad habit but started to experience significant symptoms of hormone dysregulation after being almost a year postpartum. As soon as the symptoms started, my body also began to intensely crave raw carrot salad.
Immediately, I started incorporating them back into my daily diet and within only a couple of days, most of the symptoms that I was experiencing disappeared or lessened.
And besides the positive health benefits, I also love it because carrot salad has only 4 basic ingredients, can be whipped up in 5 minutes, and it’s not just me who enjoys it—our whole family devours the entire bowl anytime it’s on the table.

What’s in Raw Carrot Salad?
Carrots – Stick to whole, long carrots in this recipe—not baby carrots.
Acid (Apple Cider Vinegar or Lemon Juice) – Adding an acid to raw carrot salad not only gives it flavor and helps it taste refreshing and delicious, but lowering the pH in the gut has also been known to help reduce unwanted bacteria in the gut.
Oil (coconut oil, olive oil, MCT oil, or avocado oil) – The oil in this salad helps the body to absorb fat-soluble vitamin A in the carrots.
Sea Salt – For flavor and beneficial trace minerals. We love Redmond Real Salt or Baja Gold Salt.
How to Make Raw Carrot Salad
Begin by peeling and then shredding the carrots. (This is the shredder that we’ve had for years and swear by.)

Note: We typically don’t peel our homegrown carrots that we grow organically. While carrots are on the Environmental Working Group’s Clean 15 List, I recommend sourcing organically when possible and washing before use. Especially when consuming raw carrot salad daily.

Put shredded carrots in a bowl. Add the acid, oil, and a sprinkle of salt.
Mix everything together and serve immediately or store in the fridge until serving.
