It Started By Mistake…

A few months ago, I went to make this easy pizza dough with yogurt. In a momentary brain lapse, I accidently doubled the recipe. When I went to spoon the pizza dough onto the preheated cast iron pans, I realized my mistake. It was way more dough than these thin crust pizzas usually have.

I went with it and continued to divide the dough between two pans and pre-baked them for 10 minutes before adding toppings.

When we sat down for dinner that night, the result was unanimous. From now on, this was the only way to make this yogurt pizza recipe.

If you are a fan of thin crust pizza, I still highly recommend this pizza dough, but if you are like our family and prefer a solid, deep-dish pizza with a thicker crust, then this cast iron pan pizza is the way to go.

Yogurt in Pizza?

It sounds strange but it works so well! The only ingredients in this pizza are flour, baking powder, salt, and yogurt. That’s it!

The combination of yogurt with the flour makes the perfect pizza crust texture that’s moist and slightly chewy and can easily be handheld.

Plus, yogurt adds extra protein and nutrition than the standard pizza crust recipe.

Cast Iron Pan Pizza Ingredients & Substitutions

Flour – I’ve used a variety of flours in the recipe and they’ve all worked well! Our standard is using a combination of hard white wheat with a hard winter wheat. But you could substitute einkorn or even an all-purpose gluten free flour if needed.

Baking Powder – Always look for aluminum free baking powder because this is an added ingredient that many standard baking powders are known to have. We either get Bob’s Red Mill baking powder or the baking powder from Azure Standard.

Sea Salt

Yogurt – Either a thick Greek yogurt or a thinner plain yogurt can be used in this pan pizza recipe. The difference is that with a thicker yogurt, you will likely need to add more than if you’re using a thinner yogurt in order to get the right texture.

Cooking Fat – This is for greasing the cast iron pans before preheating them. Any sort of heat stable cooking fat—coconut oil, lard, olive oil—are all great options!

How to Make Cast Iron Pan Pizza

Begin by greasing the cast iron pans and placing them in an oven preheating at 425°F.

While the pans are preheating, prepare your pizza dough. First, stir together dry ingredients—flour, baking powder, and salt.

Then stir in the yogurt. Mix until all of the flour is incorporated. The dough should be moist and not too dry and easily able to be spread out on the cast iron pans.

Remove the pans from preheating oven. Divide the dough equally between both pans. Spread the dough evenly over the pan. I like to use a spatula to do this. If the dough is too sticky, sprinkle a little bit of flour over the top so that it can be spread more easily.

Pre-bake the pans at 425°F for 10 minutes.

After cooking, remove from the oven and top as desired. Our favorite is to use a combination of roasted tomato sauce and pesto for the sauce and then topping the pizza with shredded farmhouse cheddar and fresh mozzarella cheeses and sprinkling sausage over that.

Note: This recipe makes (2) 12” pizzas. If you only need 1, simply halve the recipe.

Bake pizza for an additional 15 minutes until cheese is melted and lightly browned.

Cast Iron Pan Pizza Recipe

Yield: (2) 12” Pizzas

Ingredients:

– 4 cups flour
– 2 tbsp baking powder
– 2 tsp salt
– 3-4 cups yogurt*
– 2 tbsp cooking fat

Directions:

1. Preheat the oven to 425°F.

2. Grease cast iron pans with cooking fat and place the pans in the preheating oven.

3. Prepare pizza dough by stirring together dry ingredients (flour, baking powder, and salt).
Begin by adding 3 cups of yogurt to the flour mixture. Mix dough until all of the flour is incorporated and a moist but spreadable dough is formed. Depending on how thick the yogurt is, you may need to add additional yogurt to achieve the right dough texture.

4. Remove the pre-heated cast iron pans and spread the pizza dough evenly between the two pans. I like to use a spatula to spread the dough. If it sticks, sprinkle a little flour over the top.

5. Bake the pizza crusts for 10 minutes.

6. Remove pre-baked crusts from oven and add desired toppings.

7. Cook for an additional 15 minutes until cheese is melted and beginning to lightly brown.

Serve and enjoy!

*The amount of yogurt that’s needed depends on how thick the yogurt is. More yogurt will be needed if using a thicker Greek style yogurt. A thinner, more runny yogurt won’t require as much to get the right texture in the pizza dough.
